In our home we always try to eat seasonal vegetables and buy locally as much as possible. Because of this we sometimes have to get a bit more creative and often avoid the temptation of buying imported veg.
Recently I was asked "What are winter vegetables?" Winter vegetables are not (necessarily) grown in the winter but rather vegetables that can survive the winter or be stored for winter.
Here is a list of (some) vegetables that are easily stored or available during the winter months.
Beets
Bok choy
Broccoli
Brussels sprouts
Cabbage
Carrots
Celery
Celery Root
Collards
Endive
Green onions
Kale
Kohlrabi
Leeks
Lettuce
Onions
Parsnips
Peas
Pumpkin
Radishes
Rhubarb
Rutabaga
Spinach
Swiss chard
Turnips
Winter Squash
As you can see, the list isn't extensive by any means but gives you a good idea of what's available.
So next time you're planning on making soup, stew or other delicious winter cuisine, consider something in season and remember to buy local as much as possible.
