Quick & easy breakfast item. This recipe can be made ahead of time. It's pretty close to the real deal. Tons cheaper ;)
Heat oven to 325 degrees.
Lightly butter or oil one basin of a jumbo muffin pan (one per each serving).
Once oven is heated, crack egg into oiled basin(s) and break yolks (do not stir too much).
Place muffin pan in oven
Cook Sausages till browned on both sides.
Lightly toast the english muffin and spread with butter on both sides.
Once egg is fully cooked, about 10 minutes, remove from oven.
Build the sandwich as: Sausage, cheese, egg.
* We use Velveeta Cheese for the processed cheese slices. We find it tastes closest to how it should. Fresh chedder cheese is also a great alternative.
* We're still experimenting with the breakfast sausage, however we find that Maple Leaf, Breakfast Sausage Round tastes closest to the real deal (I'd imagine, cause of all the salt).
* In a large 6 muffin pan, the prep time is the same and you can make 5 servings ahead of time. Assuming you eat at least one after freshly cooked ;). When ready to eat, microwave the egg and sausage. Add the microwaved items to a fresh, buttered english muffin and a slice of processed cheese.

For a vegetarian version, try morning star breakfast sausages. That way, kids will still think they are eating meat and it will be a healthier version.
Great point james!
