D's puffy & sweet pancakes are absolutely amazing.
Mix all dry ingredients.
Add milk, veggie oil and egg to dry mixture.
Beat mixture until bubbles form.
Place in refrigerator for at least 1 hour.
Lightly oil a skillet and put on medium/medium-high.
Once skillet is hot, pour 1/4 cup of batter per pancake.
Cook until golden brown on both sides.
If the skillet is hot enough, sometimes waiting for the bubbles in the middle to pop you'll burn the pancakes. Make sure you flip an edge up and check while cooking.
