This is a great basic vegetable & beef soup.
Cut Beef into small cubes.
Slice carrots.
Chop celery.
Chop onion.
In a large pot add water, beef, peppercorns and bay leaves. Cook for 1 hour 45 minutes.
Let stock cool slightly, skim any fat from the surface.
Add all ingredients, reduce heat, cover and simmer about 20 minutes or until vegetables are tender.
You can also omit the beef by substituting half the water with vegetable stock (unsalted). Cook for the hour and 45 minutes as though you were cooking it with the beef so it can get the full peppercorn and bay leaf flavour.
