How to make a roast beef.
Preheat oven to 350.
Dust the entire roast in finely ground black pepper.
In a deep skillet heat 2 tablespoons of oil over medium heat. You want it hot, but not smoking.
Sear each side of the roast in the oil. About 30 seconds on each side.
Remove roast from pan and place on the rack in the center of a shallow roasting pan.
* If you plan on making traditional beef gravy as well, place the extra fat on top of the roast and ignore the next step.
Pour a tablespoon of oil over the roast.
Place roast on middle rack in oven.
Sprinkle with sea salt and finely ground black pepper.
The general rule is to cook it 20 minutes a pound for a medium rare roast.
Once you remove from oven, loosely wrap in aluminum foil and let stand for 10 - 15 minutes.
Oil-less method: You can also sear the roast by ignoring the skillet instructions and instead, heat the oven to 550 for 1 hour. Place the roast fat side up on the pan. Put into the oven and immediately turn down to 350.
