Deliciously prepared pork loin roast with onion bread stuffing
Preheat oven to 425
Prepare the stuffing
Cook 4 sliced onions, 1 tablespoon of oil and 1 tablespoon of butter over low heat for 10 minutes or until onions are soft and golden
Mix with bread crumbs and finely chopped oregano leaves
Prepare the roast
Score the pork loin at 2 inch intervals until almost cut in half
Lay the loin flat, place the stuffing down the middle. Tie the roast with string and rub the skin with oil and salt.
Place pork roast on a rack in a baking dish.
Bake for 30 minutes. Reduce the heat to 400 and bake for another 30 minutes or until pork is cooked to your desired liking.
