A great sauce for chicken or steak
Add butter, melt over medium low heat. Cook until foaming.
Add olive oil until hot, about 1 minute.
Add mushrooms and shallots cook until slightly browned, stirring constantly.
Slowly add wine and chicken stock, bring to a boil stirring constantly. Reduce until all liquid has disappeared.
Season with sea salt and freshly ground pepper, to taste.
