Shallots & Mushrooms in a Wine Reduction

A great sauce for chicken or steak

Ingredients

  • 2 tsp butter
  • 2⁄3 c chicken stock
  • 12 small shallots
  • 1 tbsp all purpose flour
  • 1 tbsp olive oil
  • 2⁄3 c dry white or red wine
  • sea salt
  • freshly ground pepper
  • 1 1⁄2 c sliced or button mushrooms

Instructions

Add butter, melt over medium low heat. Cook until foaming.

Add olive oil until hot, about 1 minute.

Add mushrooms and shallots cook until slightly browned, stirring constantly.

Slowly add wine and chicken stock, bring to a boil stirring constantly. Reduce until all liquid has disappeared.

Season with sea salt and freshly ground pepper, to taste.
