Great tasting simple beef stir fry.
Cut meat into thin slices.
Slice bok choy into 1/4 inch slices & halve lengthwise.
Slice onion, drain water chestnuts and bamboo shoots.
In a large pot, boil about 3 cups of water. Once boiled, take the water off the burner. Drop beef into water (like Pho), until it's almost not pink anymore. Remove and mix soy sauce, ginger and garlic. Thoroughly stir into meat & marinate 1 hour.
Add 2 tbsp oil and stir fry the mushrooms, bok choy, onion, water chestnuts and bamboo shoots for 2 minutes.
Stir in snow peas and 1 cup of beef broth. Cover and cook for 2 minutes.
Mix remaining beef broth, cornstarch, soy sauce and sugar. Add to skillet or wok.
Stir fry and bring to a boil.
Cook for an additional minute until it thickens.
Add meat to heat through.
I find that the boiling method for the beef is the only way to not make the beef rubbery. Any other suggestions are always welcome.
